Caribbean Blazer and Rice Stuffed Peppers


Ingredients:

Serves 2
½ onion, finely diced
1 tbsp olive oil
1 packet tomato and herb cooked rice
3 red peppers
1 cup grated Caribbean Blazer cheese (Cheddar with Scotch Bonnet Chilli Relish)
Fresh coriander
Spring onions, finely sliced
Fresh salad and lime wedges to serve

Method:
  • Heat the oil over a medium heat and soften the onion for 3-4 minutes. Add the cooked rice and stir through then remove from the heat. Mix through half of the grated cheese.
  • Half the peppers and season with salt and pepper, then fill with the onion, cheese and rice mix.
  • Cover with foil and bake in a 375° F, 180c or gas mark 5 oven for 20 minutes.
  • Remove the foil, top with more cheese and return to the oven for 10 more minutes.
  • Finish with fresh spring onions, coriander and lime, delicious!
