Ingredients:
Serves 2-4
8 taco shells
500g BBQ pulled pork (cooked, available in supermarkets)
1 cup, Shredded red cabbage
1 small red chilli pepper, finely chopped
½ red onion, finely diced
1 fresh mango, finely chopped
Juice of ½ a lime
Soured cream
Handful fresh coriander leaves
1 cup Festival cheese (White Stilton with Mango & Ginger), crumbled
Lime wedges
Method:
- Mix pulled pork together the shredded cabbage, chopped chilli peppers, diced onion and mango, lime juice and coriander leaves to make a crunchy salsa.
- Spoon a dollop of soured cream in the taco shells then load with pulled pork and salsa, topped with crumbled Festival cheese.
- Serve with more fresh coriander and lime wedges.
