Ingredients:
Serves 2
2 cups grated Caribbean Blazer cheese (Cheddar with Scotch Bonnet Chilli Relish)
450g beef mince
1 tbsp Cajun spices
100ml passata
1 bag of salted nachos
Sour cream
Spring onions
JalapeƱo peppers or fresh red chilli peppers finely diced
Half a red onion, finely diced
Fresh coriander
Method:
- In a heavy-based frying pan, brown the mince over a medium heat then add the Cajun spice, passata and season with salt and pepper.
- Spread the nachos out on two large plates and top with the beef and half the cheese on each plate. Pop under the grill for a couple of minutes to melt the cheese.
- Finish with a sprinkle of spring onions, jalapeƱos, red onion and coriander and a dollop of sour cream to your liking!
